StarSan is good as long as the PH is 3 or lower. I believe it's generally advertised as mixed batch being good for 3-4 weeks, but people have reported having the PH stay below 3 for several months. I have, more or less, simply assumed it wouldn't go bad over time because it is acid-based, and I wouldn't assume the acid to degrade over time, but I am not chemist.
