The gochujang eggplant recipe produces a delicious Korean-inspired side dish or vegetarian main course. Gochujang is a sweet and spicy fermented Korean chili paste that adds a wonderful depth of flavor. When paired with tender, roasted eggplant, it makes for an irresistible combination.


Recipe Gochujang Eggplant

Step 1. Place the eggplant in a colander set inside a large bowl or the sink. Sprinkle with the salt, toss to combine and let sit for 30 minutes to remove excess moisture. Step 2. Combine all the seasoning ingredients in a small bowl. Heat a pan with the oil over medium high heat. Stir fry the eggplants quickly for a minute or two until the outside starts to soften. Add the peppers and the seasoning sauce. Continue to stir-fry until the eggplants are well coated with the seasonings and the peppers are slightly wilted.

It should be thin enough to slowly drop from the wooden spoon or spatula like a thick batter.
