Procedimiento. Lava y corta las mollejas. Córtalas a lo largo en 4 pedazos y déjalas en remojo en jugo de limón. Elimina el limon y escurre las mollejas. En un caldero a fuego alto, vierte las mollejas y suficiente agua como para cubrir toda la carne y tener por lo menos 1 ½ pulgada de agua sobre la misma. Añade adobo en polvo y sal.
