In a food processor or blender, combine the drained oysters, cod livers (with up to 2 tablespoons of their oil), shallot mixture, wine, capers, lemon zest, and oregano. Blend until smooth and creamy. Pack the pate into a 1½ or 2-cup ramekin and cover the surface with cling film.

Drain the bacon. Put the bacon in a blender or food processor, and blend until it becomes fine. Add cream cheese, Worcestershire sauce, sherry, lemon juice, salt, and pepper. Blend the mixture until it becomes smooth. Add smoked oyster spread, and blend until it is well combined. Spoon the mixture into a serving dish, and refrigerate it overnight.
